Apples, apples, apples.
Autumn is the time for apples and there are many recipes with ideas of how to use apples.
Here is one that I enjoyed making and eating. It is a nutritious slice, very easy to make and great for lunch boxes in the cooler season. It just needs a little planning ahead as the oats need to be soaked overnight.
2 ½ cups oats soaked in I cup of milk and a squeeze of lemon juice overnight.
¼ cup coconut oil
¼ cup maple syrup
2 tbs sugar
½ cup shredded coconut
3 apples (half grated, half chopped into small pieces)
1 tsp cinnamon
1 tsp baking powder
1 tbs lemon juice and zest
– Preheat oven to 180c.
– Melt coconut oil and butter on low heat (once melted set aside).
– Add all other ingredients into mixing bowl and mix.
– Add coconut oil and butter to mixture
– Line baking dish with baking paper, pour in mixture and bake for about 50 minutes.
